The most famous dishes of Madeira are the traditional Espetada, the Beef and Garlic, the Chopped and the delicious grilled (especially chicken, pork chops and steaks).

Espetada is made with cubes of beef loin seasoned with garlic and salt, roasted on a skewer on a firewood. The Wine and Garlic Meat is a specialty present at all times, made with small pieces of pork marinated for at least one day in garlic sauce, wine vinegar and laurel, in which they are then fried.

This specialty is mainly made at Christmas time. The popular Picado is made with cubes of veal meat fried in garlic and sometimes peppers, accompanied with plenty of sauce and fries.  

The Fried Corn – tasty cubes of fried cornflour – is one of the most typical accompaniments of Madeira, being usually served with meat dishes. With regard to vegetables, the menus present products from the island, such as carrots, peas, zucchini, pimpinela and beans, usually prepared simply.
